Soak cashews the night before. Place in a small bowl and cover with water. Set aside. If you forget to soak them, add them to hot water while the carrots cook.
Preheat oven to 375 degrees Fahrenheit.
Cut carrots in matchsticks. Place in a large bowl and mix with avocado oil, garlic powder, salt, and pepper. Place on two parchment lined baking sheets, spreading out evenly. Make sure they are not too close together.
Bake for 20 minutes, stir/rotate, and bake for another 15 minutes.
While the carrot fries bake, make the sauce. Place all ingredients into a Vitamix or high powered blender and blend until smooth.
Once carrots are done sprinkle with fresh cilantro.

1 sheet of vegan-friendly puff pastry, room temperature
1 tbsp chopped basil
1 x 300 g / 10 oz pot of hummus
Fresh basil, torn (optional)
Preheat oven to 220C / 430F.
Drizzle the oil over the vegetables in a medium roasting tray. Season with salt and pepper, to taste. Roast for 20-25 minutes.
Meanwhile, prepare the puff pastry sheet. You can either make one large tart or two smaller ones. To make two, simply slice the sheet in half widthways. You may need to trim it a little to fit onto a baking sheet.
Score a 3cm border around the sheet and prick the middle with a fork a few times to stop it puffing up too much. Bake for 15-20 minutes (or according to the packet’s instructions).
Once the puff pastry is cooked, remove from the oven and top with the hummus, using as much or as little as you like. Then top with the roast vegetables.
Scatter over some fresh basil (optional) and enjoy! Delicious served both hot and cold.

Grate pumpkin using the large grate on a box grater, place in a bowl and set to one side.
Combine ½ cup yogurt, egg, flour, sage and parmesan in a bowl. Add pumpkin and mix to combine.
Place a small frying pan over a medium heat, pour oil into the pan and when hot, spoon ½ tablespoon scoops of mixture into the hot oil. Cook for 2 minutes or until crisp and golden. Flip and cook for a further minute. Place on a paper towel lined plate to drain off any excess oil and repeat with remaining mixture.
For the sauce, combine 1 cup of yogurt, garlicand lemon juice in a bowl and season to taste.
Serve bites with garlic dip on the side for dunking.
