  • 8 large carrots (about 850 grams)

  • 1/2 cup raw cashews, soaked
  • 1 1/2 tablespoons red curry paste
  • 1 tablespoon coconut aminos
  • 2 tablespoons lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon ginger
  • 1/4 cup water

Instructions

  1. Soak cashews the night before. Place in a small bowl and cover with water. Set aside. If you forget to soak them, add them to hot water while the carrots cook.
  2. Preheat oven to 375 degrees Fahrenheit.
  3. Cut carrots in matchsticks. Place in a large bowl and mix with avocado oil, garlic powder, salt, and pepper. Place on two parchment lined baking sheets, spreading out evenly. Make sure they are not too close together.
  4. Bake for 20 minutes, stir/rotate, and bake for another 15 minutes.
  5. While the carrot fries bake, make the sauce. Place all ingredients into a Vitamix or high powered blender and blend until smooth.
  6. Once carrots are done sprinkle with fresh cilantro.

  • 2 tbsp olive oil
  • 2 medium bell peppers, sliced
  • 1 small courgette / zucchini, sliced
  • 1 medium red onion, sliced into wedges
  • Approx 10 baby tomatoes, whole or halved
  • Salt and pepper, to taste
  • 1 sheet of vegan-friendly puff pastry, room temperature
  • 1 tbsp chopped basil
  • 1 x 300 g / 10 oz pot of hummus
  • Fresh basil, torn (optional)

Instructions

  1. Preheat oven to 220C / 430F.
  2. Drizzle the oil over the vegetables in a medium roasting tray. Season with salt and pepper, to taste. Roast for 20-25 minutes.
  3. Meanwhile, prepare the puff pastry sheet. You can either make one large tart or two smaller ones. To make two, simply slice the sheet in half widthways. You may need to trim it a little to fit onto a baking sheet.
  4. Score a 3cm border around the sheet and prick the middle with a fork a few times to stop it puffing up too much. Bake for 15-20 minutes (or according to the packet’s instructions).
  5. Once the puff pastry is cooked, remove from the oven and top with the hummus, using as much or as little as you like. Then top with the roast vegetables.
  6. Scatter over some fresh basil (optional) and enjoy! Delicious served both hot and cold.

  • 4 tablespoons unsweetened soy yogurt

Instructions

  1. Soak the cashews in water for at least 4 hours. If you want to make it easier for your blender you can also soak them overnight.
  2. Drain the cashews and put them in a high speed blender together with the unsweetened soy yogurt, the garlic, the nutritional yeast, the lemon juice, salt, and the herbes de Provence.
  3. Process until smooth. This will take about 3-4 minutes depending on your blender. You want the cashew cream cheese to be super smooth without any chunks.
  4. Season with black pepper and stir in the fresh chives and cress. Enjoy!

  • 2 8 packs Old El Paso Taco Boats
  • 1 ounce taco seasoning
  • Olive Oil Spray
  • 1/2 lb. hot pork sausage or regular, casing removed (Such as Jimmy Dean)

  • 3/4 cup Pale Ale beer or your favorite type of beer
  • 16 oz. Velveeta cut into 1” cubes
  • 1/2 c. Shredded Pepper Jack cheese
  • 1 can Rotel Tomatoes, undrained 14.5 ounce can
  • 1 cup black beans drained and rinsed
  • 1/4 cup chopped fresh cilantro

INSTRUCTIONS

  1. Preheat oven to 350F
  2. Cut the Taco Boats in half width wise and place on a large baking sheet. Spray with olive oil spray (or drizzle with olive oil) and then sprinkle with the Taco Seasoning. Spray with more olive oil.
  3. Bake for 10 minutes, or until the taco boats are browned and crispy. Remove from the oven and set aside.
  4. While the chips are cooking, begin your dip. Start by browning the sausage in a medium skillet over medium heat. Use a wooden spatula to crumble and turn the sausage as it cooks.
  5. Once the sausage is cooked through, add in the beer and allow to cook down/reduce for 3-4 minutes, stirring occasionally.
  6. Stir in the Velveeta and shredded pepper jack. It should take about 3-5 minutes for all the cheese to melt in. Once melted, stir in the tomatoes, beans, and cilantro.
  7. Serve immediately with the homemade chips. Enjoy!

  4. For the sauce, combine 1 cup of yogurt, garlicand lemon juice in a bowl and season to taste.
