INGREDIENTS

  • 2 tablespoons vegetable oil
  • 1/2 pound ground beef or ground pork
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon garlic, chopped
  • 1 tablespoon Sichuan peppercorns
  • 1 teaspoon crushed red pepper (or to taste)
  • 1/4 teaspoon ground white pepper (optional)
  • 1 tablespoon Shaoxing wine (optional)
  • 2 tablespoons chili bean paste (Doubanjiang)
  • 1/4 cup chicken broth or water
  • 1 teaspoon cornstarch
  • 1 pound package medium firm tofu, cut into 1/2-inch cubes
  • 1/2 teaspoon sesame oil or chili oil
  • 1/4 cup green onions, finely chopped

INSTRUCTIONS

  1. Heat oil in a large skillet over medium high heat until the hot oil sizzles, about 1 minute. Add ground beef (or ground pork) and cook until browned on all sides, about 5-7 minutes. Make sure to break up the meat into small pieces to help even browning.
  2. Add ginger, garlic, Sichuan peppercorns, crushed red pepper, and white pepper (if using). Stir well and cook until fragrant, about 1 minute.
  3. Add Shaoxing wine, chili bean paste, chicken broth (or water), and cornstarch. Mix well until smooth and let the sauce mixture simmer over medium heat for 3-4 minutes until thickened a bit.
  4. Carefully add tofu and toss gently to coat. Optionally, you can gently heat the cubed tofu in a large cooking pot of boiling water over medium heat for 1-2 minutes to firm up a bit, and then transfer into the sauce mixture.
  5. Stir in sesame oil (or chili oil) and green onions and let the tofu simmer in the sauce for 1 minute.
  6. Serve immediately with a bowl of steamed rice or fried rice.

  • 1 tablespoon olive oil
  • 2 tablespoons ginger, minced
  • 1 tablespoon garlic, minced
  • 15 large tiger prawns, deveined, rinsed and dried
  • 1 tablespoon Chinese cooking wine
  • 4 tablespoons soy sauce
  • 1/2 tablespoon sugar
  • 1 teaspoon ground black pepper (optional)
  • 2 tablespoons water
  • 2 tablespoons cilantro, for garnish

INSTRUCTIONS

  1. Heat oil in a large skillet over medium-high heat. Add ginger and garlic and cook for 30 seconds until fragrant. Add tiger prawns and stir to coat with oil. Continue to cook for 1-2 minutes, stirring constantly to ensure even cooking on all sides.
  2. Stir in cooking wine and continue to stir for 15 seconds. Stir in soy sauce and reduce heat to medium. Cook for 1 minute, stirring occasionally.
  3. Stir in sugar, pepper (optional) and water. Turn heat to high, cover and cook for 2 minutes.
  4. Turn heat down to low, give the prawns a final stir, ensuring that the sauce is coating prawns completely. Remove from heat. (Note: prawns will be done once they are evenly coloured and have shrunk in size but are no longer getting smaller).
  5. Serve with some cilantro on top.

INGREDIENTS

Black Cod:

  • 1 lb. (400 g) piece of black cod, cut into 2 steaks (1/2-inch thick)
  • 1 tablespoon minced garlic (approximately 4 cloves garlic)
  • 1 teaspoon soy sauce
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • chopped cilantro, for garnish
  • jalapeƱo slices, for garnish (optional)

Black Bean Sauce:

  • 1/2 tablespoon fermented black beans
  • 1 tablespoon water
  • 1 teaspoon maggi sauce (flavored soy sauce)
  • 1/2 teaspoon sesame oil

INSTRUCTIONS

  1. In a large ziploc bag, add garlic, soy sauce, sugar, salt and pepper. Shake well to combine. Add cod steaks to the ziploc bag, press the air out of the bag and seal tightly. Press the marinade around the cod to coat it. Place bag in the fridge and marinate for least 30 minutes, up to overnight.
  2. Remove the marinated cod out of the bag and place them on the air frying basket, spaced evenly. Cook at 350 F for 17 minutes.
  3. In the mean time, prepare the black bean sauce. In a small bowl, add fermented black beans, water, maggi sauce, and sesame oil. Stir to mix evenly
  4. Remove cod from the air fryer and place in a dish. Garnish with cilantro and jalapeƱos (optional). Pour the black bean sauce over top of the fish and serve.
