Ingredients

Crust

  • 12 ounces riced cauliflower about 1 medium head
  • 1 cup shredded mozzarella
  • 1 large egg
  • 1 clove garlic minced
  • 1/2 tsp salt
  • 1/2 tsp pepper

Toppings

  • 1 1/2 cups shredded cheddar cheese
  • 4 breakfast sausage links cooked and sliced
  • 1 jalapeno sliced
  • 4 large eggs
  • Salt and pepper
  • 1 large ripe California Avocado thinly sliced
  • 1/4 cup chopped tomato
  • Chopped cilantro for garnish

Instructions

Crust:

  1. Place the riced cauliflower in a large microwave safe bowl and cover with plastic wrap. Cook on high for 10 minutes and then carefully transfer to a tea towel lined sieve set into the sink or over a bowl. Let sit until cool enough to handle.
  2. Preheat the oven to 400F and grease a 12 inch oven-proof skillet (cast iron works best).
  3. Gather the ends of the towel together and squeeze out as much moisture as possible from the cauliflower. Transfer to a bowl and add the mozzarella, egg, garlic, salt, and pepper. Stir well to combine.
  4. Transfer to the prepared skillet and press firmly and evenly into the bottom. Bake 18 to 22 minutes, until the edges are golden brown and the center is firm to the touch.

Pizza:

  1. Sprinkle the crust with 1 cup of the cheese, the sausage slices, and the jalapeno slices. Crack the eggs onto the pizza at evenly spaced intervals (if you prefer your yolks broken, break them with a fork). Sprinkle with the remaining cheddar and season with salt and pepper.
  2. Bake 8 to 12 minutes or until eggs are done to your liking. Remove and top with avocado and tomatoes. Sprinkle with cilantro if desired.

Sloppy Joe Pizza Recipe

Ingredients

  • 1 lb lean ground beef
  • 1 cup yellow onion, diced
  • 1 cup ketchup
  • 1 tsp Worcestershire sauce
  • 1/4 cup light brown sugar
  • 2 tsp onion powder
  • 13.8 oz Pillsbury pizza crust
  • 2 cups shredded mozzarella and cheddar cheese blend
  • 1/3 cup French’s fried onions

Instructions

  1. Preheat oven to 400F.
  2. Cook ground beef in large saute over medium-high heat with a dab of butter or margarine.
  3. Add diced onions to the pan with the ground beef while it’s cooking.
  4. Crumble ground beef well.
  5. Once ground beef is fully cooked, drain excess grease from the pan and reduce heat to low.
  6. Dump ketchup, Worcestershire sauce, brown sugar and onion powder into a medium mixing bowl. Stir well.
  7. Pour sauce on top of ground beef.
  8. Stir until all of the ground beef is coated in sauce and leave the pan to sit over low heat.
  9. Press pizza crust out onto a greased 10 x 15 inch baking sheet.
  10. Place the pan in the oven and bake the crust for 8 minutes.
  11. Remove the pizza crust from the oven and spread the sloppy joe mixture on top.
  12. Sprinkle the shredded cheese on top of the sloppy joe mixture.
  13. Crumble the French’s fried onions slightly and sprinkle them on top of the cheese.
  14. Return the pizza to the oven and bake until the cheese is completely melted and the crust is nicely browned. 6-8 minutes.
  15. Remove the pizza from the oven and slice.
  16. Serve and enjoy!
