Vegan Hummus Tart Recipe – Vegan Hummus Recipe – How To Make Vegan Hummus

Prep: 10 mins – Cook: 25 mins – Total: 35 mins

  • 2 tbsp olive oil
  • 2 medium bell peppers, sliced
  • 1 small courgette / zucchini, sliced
  • 1 medium red onion, sliced into wedges
  • Approx 10 baby tomatoes, whole or halved
  • Salt and pepper, to taste
  • 1 sheet of vegan-friendly puff pastry, room temperature
  • 1 tbsp chopped basil
  • 1 x 300 g / 10 oz pot of hummus
  • Fresh basil, torn (optional)

  1. Preheat oven to 220C / 430F.
  2. Drizzle the oil over the vegetables in a medium roasting tray. Season with salt and pepper, to taste. Roast for 20-25 minutes.
  3. Meanwhile, prepare the puff pastry sheet. You can either make one large tart or two smaller ones. To make two, simply slice the sheet in half widthways. You may need to trim it a little to fit onto a baking sheet.
  4. Score a 3cm border around the sheet and prick the middle with a fork a few times to stop it puffing up too much. Bake for 15-20 minutes (or according to the packet’s instructions).
  5. Once the puff pastry is cooked, remove from the oven and top with the hummus, using as much or as little as you like. Then top with the roast vegetables.
  6. Scatter over some fresh basil (optional) and enjoy! Delicious served both hot and cold.

Vegan Carrot Stir Fry Recipe – Ribbon Carrot Stir Fry – How To Make Vegan Carrot Stir Fry

Prep: 5 mins – Cook: 10 mins – Total: 15 mins

  • 2 medium carrots
  • 1/2 red onion
  • 1 tbsp oil
  • 2 tsp all purpose seasoning salt-free
  • 1/2 tsp black pepper
  • 1/2 tsp salt

  1. Peel the carrots, then throw out the outer dirty layer.
  2. Peel the clean carrots with a stronger motion, creating the layers or “ribbons”. Depending on your preferences, you can make thicker or thinner ribbons. I recommend thinner ones, as they cook better.

Vegan Tomato And Asparagus Quiche Recipe – Vegan Quiche Recipe – How To Make Vegan Quiche

Prep: 45 mins – Cook: 35 mins – Total: 80 mins

  • 1 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup non-dairy butter I used Earth Balance buttery sticks
  • 2-3 tablespoons ice cold water

  • 1 tablespoon coconut or vegetable oil
  • 1/4 cup white onion minced
  • 1 cup fresh asparagus chopped
  • 3 tablespoons dried tomatoes chopped
  • 1 14 ounce block of medium/firm tofu, drained
  • 3 tablespoons nutritional yeast
  • 1 tablespoons non-dairy milk
  • 1 tablespoon all purpose flour
  • 1 teaspoon dehydrated minced onion
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon spicy mustard
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon turmeric optional
  • 1/2 teaspoon liquid smoke
  • 3 tablespoons fresh basil chopped
  • 1/3 cup vegan mozzarella cheese I used Diaya
  • salt and pepper

  1. Spray one 9″ pie pan or four 5″ mini quiche dishesand set aside. Preheat the oven to 350 degrees F.
  2. To make the crust combine flour and salt in a bowl. Add non-dairy butter in small chunks and with a pastry cutter or your fingers, cut into the dough until it resembles small pea sized pieces (a few larger ones are okay). Add cold water and turn over onto a floured surface to bring together. It will be pretty dry, but should stick together when pressed between your fingers.
  3. Press into the prepared pie pan(s) and bake for 10 minutes. Remove from oven and set aside to cool while making the filling.
  4. To make the quiche filling heat 1 tablespoon of oil over medium heat. Add onions and saute until translucent and fragrant (about three minutes). Add asparagus and tomatoes and saute for another three minutes until asparagus becomes slightly tender. Remove from heat and set aside.
  5. In a food processor or blender combine tofu, nutritional yeast, non-dairy milk, flour, onions, turmeric, liquid smoke, lemon juice, and sea salt until smooth. Transfer to a bowl. Add asparagus mixture, fresh basil, and vegan cheese and stir everything together. Season with salt and pepper to taste.
  6. Spoon filling into chilled pie crust, smoothing over the top. Bake for 30-45 minutes (less if you are making small quiche) until top has browned slightly and a knife inserted in the middle comes out clean.
  7. Remove from heat and allow to cool for 20 minutes before slicing. Serve warm.

Vegan Carrot Hot Dogs Recipe – Vegan Hot Dog Recipe – How To Make Vegan Hot Dogs

Ingredients: For the carrots:

  • 8 large carrots
  • 1 Tbsp oil
  • 1 ½ tsp salt
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 2 heaping tsp paprika powder
  • 1 ½ Tbsp soy sauce
  • ½ cup / 120 ml water

For the creamy chickpea salad:

  • 14 oz / 400 g canned chickpeas
  • 3 medium pickles
  • 1 small onion
  • a big handful of lettuce
  • 1 tsp apple cider vinegar or white wine vinegar
  • ½ tsp dried oregano
  • ½ tsp salt
  • ground black pepper to taste
  • ½ cup / 120 ml vegan light or heavy cream or sunflower sour cream or vegan mayo or homemade vegan cream
  • Hot dog buns

  1. Wash the carrots but don’t peel them. Boil them until soft but not mushy (don’t add any salt just yet). Drain and let them cool down. Mix oil with salt, herbs, paprika powder, soy sauce and water. Peel the carrots and put them into a plastic bag. Cover the carrots with marinade and let them marinate in the fridge for at least a few hours or overnight.
  2. For the chickpea salad, drain and rinse the chickpeas. Mash them a little using a fork. Don’t mash them completely, leave some of them whole. Add thinly chopped pickles, onion and lettuce. Add vinegar, oregano, salt, pepper and vegan cream or sunflower sour cream. Mix everything together. Put the salad into a fridge until it’s time to grill the carrots.
  3. To make perfectly soft hot dog buns, use this yeast dough recipe. Just make the dough and let it rise in a warm place for about an hour. Then knead the dough again and divide it into 8 pieces. Form 8 hot dog buns (if the dough sticks, make your hands a bit oily) and place them on a baking tray covered with parchment paper. It’s good to place them near to each other, then they will stick together when baking and the sides will be much more softer. Let the buns rise in a warm place for about 40 minutes. Preheat the oven to 400 F / 200 C. Bake the buns for 20 minutes. Don’t overbake them. They need to be just lightly golden brown on the top and bottom. Take the buns out of the oven, brush them with water and cover them with a moist kitchen towel. Let them be until you grill the carrots.
  4. Take the marinated carrots and put them onto a stick. Grill them until they have grill marks and start to get much more darker. Take a hot dog bun and cut it open. Cover the inner sides of the bun with a little bit of ketchup. Add a lettuce leave, grilled carrot and top it all of with a load of chickpea salad. Enjoy!

Vegan Mashed Potato Recipe – Vegan Side Dish Recipe

Prep: 10 mins – Cook: 35 mins – Total: 45 mins

  • 1 garlic head (optional but recommended)*
  • Olive oil for roasting garlic (optional but recommended)
  • 2 ½ pounds (1.1kg) potatoes (I use half Russet and half Yukon Gold potatoes)
  • 1 tablespoon kosher salt** + more to taste
  • 3/4 cup (180 mL) “lite” or reduced-fat coconut milk***
  • 6 tablespoons vegan butter, softened at room temperature
  • 1 1/2 tablespoons white miso paste (or mild / yellow miso), softened at room temperature
  • Freshly cracked black pepper to taste
  • Chopped fresh chives, for serving

  1. Roast the garlic (optional). Preheat the oven to 400°F/200°C. Remove the outer layers of the garlic head and then slice off a thin layer off the top to expose the skin of the cloves. Rub the exposed cloves with a bit of olive oil. Wrap in parchment paper and then in foil to make a packet, and then place directly on an oven rack. Roast for 35-40 minutes until soft and tender and lightly golden. Once cool enough to handle, squeeze the cloves out of the skin into a small bowl and mash with a fork.
  2. Meanwhile, take the vegan butter and miso paste out of the fridge to soften.
  3. Start preparing the potatoes. Peel the potatoes and then rinse them in cold water. Chop the potatoes into fourths or eighths, dependent on size. Place the potatoes in a large saucepan or Dutch oven and add enough water to cover them. Add 1 tablespoon of kosher salt (or 1/2 tablespoon sea salt) and stir to combine. Bring to a boil, then reduce the heat to maintain a simmer. Simmer until the potatoes are very soft and yield no resistance when poked with a fork and almost start to fall apart, 20 to 25 minutes.
  4. Drain the potatoes in a colander. Return the potatoes back to the saucepan. Heat over low heat for a few minutes, tossing the potatoes around to prevent them from sticking. This removes any remaining moisture in the potatoes.
  5. While the potatoes are cooking, place the softened butter in a small bowl and add the miso paste and the mashed roasted garlic (if using). Using a fork, cream them together until well combined.
  6. Heat a small or medium saucepan over medium-low heat. Add the miso butter and stir to combine. Once it’s almost melted, pour in the lite coconut milk. Whisk often to combine and stir until everything is melted. Season with a bit of freshly cracked black pepper. Continue heating until the mixture is very warm but not bubbling.****
  7. Grab a large bowl. If you are using a ricer, add the warm potatoes to the ricer and pass them through into a large bowl. If you are using a potato masher, mash the potatoes. Add the warm miso butter-coconut milk mixture. Fold gently with a silicone spatula or wooden spoon. wooden spoon). Be gentle and don’t overmix, especially if using Yukon Gold potatoes – it can make the potatoes watery.
  8. Taste for seasonings, adding kosher salt and freshly cracked black pepper to taste. I usually add a bit of salt, taste, add more salt, and repeat until they’re perfect.
  9. Garnish with fresh chives and serve warm. For extra indulgent mashed potatoes, drizzle a little melted vegan butter on top of the potatoes right before serving.
